We present an easy take on a drink from our latest drinks list. It's a batch prepared mix that's packed with the tastes of a Christmas time, rendering it perfect for a celebration. Reserve the remaining citrus syrup for breakfast cocktails, sweets, or for another batch of this cocktail.

The Bikini Cocktail

Makes enough for 10 people

To make the Clementine Syrup (produces 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar

To make the Premix (yields 850ml, serving 10)

400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish

Instructions

Making the Citrus Syrup: Put all the components into a pan, bring to a simmer, mixing until the sugar dissolves. Then, turn off the burner allowing it to reach room temperature completely. Decant into an sterilised bottle, cap it keeping it in the refrigerator, where it will keep for about four weeks.

Preparing the Cocktail Base: Combine every spirits and syrup in a large bottle, let it rest for an hour, then filter it best through a fine cloth, so it's perfectly clear.

When ready to serve: Add 85ml of the cocktail base into your mixing glass containing ice, gently stirring carefully for a minute to cool it down. Strain into an frosted cocktail glass or similar, top with some cranberries adding the final touch with a light spray of mandarin oil over the top.
